What is ‘all purpose flour’ referred to in American cooking recipes?

cooking recipes
little nell asked:

Is it plain or self raising?
From the answers I’m getting I suspect our American cousins are on-line. Do any of you realise that we do not have anything called ‘all purpose flour’ in the UK. We use plain or self raising. This was a genuine question because I went on a recipe site but was confused by this expression. They patently are not inter-usable since one has a raising agent in it and the other does not. Recipes in the UK always state which one to use. And to Sway 27 - there is no call for you to be so rude. I have been baking cakes and pies to prize winning standard for over 40 years. It is a pity you do not realise that the whole world does not march to your tune.

All purpose flour is COMPLETELY different from self-rising flour. You need to add soda or baking powder to all-purpose flour to make it rise—-self-rising flour is great to have around because you can skip adding soda, salt or baking powder.
