What are some good recipes for freezer cooking for 1?

I am trying to put together a recipe book for my mom who is now single and is used to purchasing convenience foods but can no longer afford them. She is not big on cooking daily so I thought something she could microwave or grill would be helpful (No bean or soup recipes please)
